PAPRIKA ROASTED SWEET POTATO

This spiced and smoky side is a healthy and flavourful addition to any meal.

Whether it's sunny BBQ season or those chilly winter evenings, this side is one of my favourite go tos. Rich in sweet and smoky flavours, these Paprika Roasted Sweet Potatoes are a delicious and healthier alternative to the standard white roasties. Easy to make, cheap and deliciously nutritious. Perfect for meal prep, they make great cold left overs also.
Sweet potatoes are packed with; fibre, vitamins C and B as well minerals iron, calcium, selenium! An easy way to fill your plate with extra goodness.
Pictured below, we love to pair them with our signature Sweet And Spicy Salsa, and load on our protein rich Crispy Paprika Chickpeas. If thats's too much paprika for you, switch one of the dishes up to use ground cumin, the two spices together are a match made in heaven.
TIP: Pictured below. After steaming potatoes in preparation for roasting, add them back to the pan, mix in the oil, spices and garlic, then apply the lid and shake hard to loosen parts of the potato. Doing this extra step means when roasted, the spuds have an extra crispy outer layer, but still soft on the inside. The perfect potato!
Ingredients
- Sweet Potatoes (6 medium, 600g)
- Olive Oil (4 tbsp)
- Fresh Garlic (6 cloves, 2 tbsp)
- Paprika (2 tsp)
- Smoked Paprika (2 tsp)
- Rosemary (1 tbsp)
- Salt (1 tsp)
- Black Pepper (1 tsp)
Instructions
1. Preheat the oven to 180°C (360°F).
2. Roughly chop sweet potatoes (large wedges work well) and add to boiling water for around 15 minutes until cook through. While they're boiling, mince the garlic.
3. Then using our top tip, add them back to the pan, mix in the oil, spices, rosemary and garlic, then apply the lid and shake hard to loosen parts of the potato. Doing this extra step means when roasted, the spuds have an extra crispy outer layer, but still soft on the inside. The perfect potato!
4. Add to a roasting tray or dish, for extra extra crispy spuds, drizzle over a little more olive oil.
5. Roast for around 20 minutes, then serve! Simple as that. Greta for cold left overs too.
